(6) Bake-in: Remove the melon strips, drain the sugar liquid, and put it in the drying room. Bake until the edge curls and the surface becomes small wrinkles.

(7) Cooking: Pour the freshly-baked melon strips into the sandwich pot together with the sugar solution, add sugar to a concentration of 50%, and boil and concentrate. When the sugar solution is increased to 73%, the sugar solution can be drained. .

(8) Baking shaping: After cooling, the melon strips are held in a bar shape by hand or mechanically and then baked again in a drying room, and the temperature is maintained at about 60° C. until the melon strips are dried until they are sticky. Then dry the melon strips by 50 kilograms plus sugar powder 10 kilograms and mix well, so that the surface of the melon strips is affixed with a layer of sugar powder, and then the extra sugar powder is sieved with a sieve to become a sweet, crispy, crystallized watermelon fruit.
