How to process roast goose?
Roast goose is a beloved traditional dish from Guangdong, renowned both domestically and internationally for its unique flavor and crispy texture. This time-honored recipe has been passed down through generations and is now enjoyed by many around the world.
To prepare roast goose, it's essential to start with high-quality ingredients. The best choice is the Qingyuan black-brown goose, also known as the Ukrainian brown goose, which is known for its tender meat, soft skin, and ideal weight of 2.25 to 3.0 kilograms. Goslings can also be used if they meet the same quality standards. Once selected, the geese are slaughtered, bled out, and then cleaned thoroughly. Their internal organs are removed, and the body is carefully prepared for seasoning.
Next comes the seasoning process. For every 50 kg of raw goose, you'll need 2 kg of refined salt, 0.2 kg of star anise, 2 kg of sugar, 500 g of white wine, 1 kg of light soy sauce, 2 kg of sesame seeds, and a small amount of garlic and other seasonings. These ingredients are mixed evenly and then placed inside the goose’s cavity. The opening is sewn shut using a bamboo needle, and the entire bird is coated with a syrup made from boiling sugar in cold water. This helps create that signature glossy finish and enhances the flavor.
Once the goose is fully seasoned, it's ready for roasting. The oven should be preheated to a low temperature first. Place the goose on the rack, and let it cook over gentle heat for about 20 minutes until the skin begins to turn golden. Then, increase the oven temperature to 200°C and continue roasting for another 20 minutes. To give it an extra layer of flavor, a thin layer of peanuts is brushed onto the skin before finishing.
The finished product should have a deep red color, crispy skin, and juicy, flavorful meat. It’s best served either hot or cold, sliced into even pieces and arranged on a plate. Some people prefer to cut and pack it for later consumption, allowing customers to reheat it at home and enjoy the original taste of the whole roasted goose.
