Making of multi-flavored mushrooms

During the processing of shiitake mushrooms, a significant amount of mushroom stems are often discarded due to grading or export requirements. However, these stems contain similar levels of protein, amino acids, and vitamins B, C, and D as the caps and gills. It's a waste to throw them away. To make better use of this by-product, a method has been developed to create delicious, multi-flavored shiitake silk from these stems.

1. Soaking: First, remove any impurities from the broken mushroom stems. Any damaged or infected parts should be discarded. Place the stems in a container with twice their volume in fresh water. Add a small amount of vinegar to help clean and preserve the texture. Let them soak for 24 hours. After soaking, rinse thoroughly and pass them through a bamboo sieve to drain excess water.

2. Drying: Once drained, the mushrooms should be dried in a well-ventilated and sunny area. Alternatively, they can be placed in a drying room and baked at a temperature between 50°C and 55°C. Continue drying until the moisture content drops below 18%, ensuring they become crisp and ready for the next step.

3. Seasoning: Prepare a seasoning mix consisting of 80% starch, 10% sugar, 4% salt, 3% pepper, 2% fresh chili, and 1% monosodium glutamate. Mix all ingredients thoroughly with water until a smooth paste is formed. All seasonings must meet national health and food safety standards. The seasoning powder typically makes up 10% to 15% of the total weight of the mushroom strands.

4. Frying: Heat rapeseed oil in a large pot until it reaches 150°C. Once the mushrooms are mixed with the seasoning, carefully spread them on a wire mesh and fry gently. Avoid shaking the basket to ensure even cooking and prevent the pieces from sticking together. Fry until golden brown and crispy, taking care not to over- or under-fry.

5. Packaging: After cooling, portion the finished product into 200g or 250g packages and place them in food-grade plastic bags. Seal each bag using a heat sealer. The resulting multi-flavored shiitake silk is golden yellow, crispy, and offers a sweet-spicy flavor with a unique aroma. It’s a convenient, tasty snack suitable for all ages. This innovative product not only adds value to what was once considered waste but also allows for easy storage and long-distance distribution. It brings both environmental and economic benefits, making it an excellent addition to any snack line.
