In contrast to America’s expansive farmlands, ancient Japan’s landscape was rugged and mountainous, forcing cattle farmers to raise their livestock in small, isolated herds. These conditions contributed to the unique characteristics of Wagyu cattle, which were initially bred for agricultural work like pulling carts and ploughs. Consequently, they developed distinctive traits, such as larger forequarters and lighter hindquarters, along with a slower growth rate that requires careful nurturing. Historically, beef consumption in Japan remained modest until after World War II, but by the 1980s, the nation had cultivated a thriving industry centered around this revered delicacy.

What truly sets Kobe beef apart is the meticulous attention to detail that defines its production. At J.B. Kobe Farms, this same dedication lives on. Owners Justin and Joey Baker have crafted a reputation for excellence by adhering to rigorous standards that ensure their Wagyu beef rivals the finest Japanese imports. Their cattle graze freely to boost omega-3 levels and grow slowly, reaching maturity at three years of age. Every animal undergoes DNA verification to confirm its Japanese heritage and boasts at least 87.5% Wagyu bloodlines—far exceeding the typical 50% found in other "Kobe-style" offerings across the U.S.

The quality of Wagyu beef is largely determined by its marbling, the intricate network of white fat veins that run through the meat. Higher marbling results in superior grades, offering richer flavors and juicier textures. In the U.S., only 2% of all beef achieves Prime status, with an even smaller percentage surpassing it. Yet, every cut of J.B. Kobe Wagyu beef exceeds Prime, thanks to its unparalleled marbling and exceptional quality.
