Honey should be paid attention to when storing and transporting honey
First, choose a suitable storage container. Honey is a weakly acidic liquid and should be stored in non-metallic containers such as glass jars, plastic drums, or food-grade plastic containers. In areas with high honey production, dedicated honey storage tanks or large containers can be used. The storage container must be clean and hygienic—always wash and dry it thoroughly before storing honey to avoid any unwanted odors. When filling the container, do not overfill it. Especially during transportation, leave 25% to 30% of space to prevent overflow or bursting due to temperature fluctuations, which could lead to fermentation and damage. Store honey in a cool, dry, clean, well-ventilated area at a stable temperature between 5°C and 10°C.
Second, store different types of honey separately. Honey varieties vary significantly across different regions in China, and even within the same region, there are multiple types. Each type has its own unique color, flavor, and characteristics, catering to different consumer preferences. Therefore, it's important to keep them separate to maintain their quality and distinctiveness.
Third, ensure cleanliness by removing impurities. Honey often contains pollen, wax particles, bee remains, and sand. To purify it, place the honey in a large container and let it settle in a warm, dry room. The settling time depends on the temperature: about three days at 20°C or just ten hours at 35°C. After sedimentation, the heavier particles will sink, and the clear honey will rise to the top. At this point, you can filter the honey and store it separately.
Fourth, prevent fermentation by reducing moisture content. Immature honey has high water content, making it ideal for yeast growth. Before storage, allow the honey to mature by placing it in an open container in a dry, well-ventilated area at temperatures above 25°C for several days. This helps evaporate excess moisture, ensuring the honey is fully matured before storage.
Fifth, protect honey from moisture absorption. Honey is highly hygroscopic, so always store it in a sealed container in a dry, cool, and well-ventilated area at 5°C to 10°C. Avoid keeping strong-smelling items nearby, as honey can easily absorb odors.
Sixth, understand that crystallization is natural and beneficial. Crystallized honey is easier to store and transport. To speed up the process, add about 0.5% of finely ground crystallized honey to the liquid honey, but ensure the main batch remains clear. When you need to use it, gently melt the crystallized honey using a double boiler. Fill the inner pot with honey and the outer one with water. Heat until the temperature reaches 71°C, then let it sit for a few minutes before removing from heat. Let it rest overnight, skim off any foam, and transfer it into sterilized glass bottles. Seal tightly to prevent re-crystallization.
