After soaking, rinse the chips thoroughly with fresh water several times to remove any residue. This step is crucial to prevent the Maillard reaction during the candying process. Then, proceed with a three-step candying method. Start by preparing a sugar solution with about 35% sugar and 30% citric acid to adjust the pH to between 2.0 and 3.0.
