Sweet potato dry processing method
1. Selection of Potatoes: Choose sweet potatoes that are free from worms, rot, and have a smooth skin with a fresh color. These will serve as the best raw materials for making this delicious treat.
2. Peeling and Cutting: Wash the selected sweet potatoes thoroughly, then peel them. Cut them into small pieces, about 3 cm in size, or slice them into moderate strips for even cooking.
3. Boiling: Place the cut sweet potatoes into boiling water and cook them until they are tender. For better texture, ensure the sweet potatoes are cooked halfway through, while the outer skin remains slightly firm.
4. Drying: After boiling, spread the sweet potatoes on a clean tray and let them dry under the sun for a few hours. Alternatively, you can use an oven set at a low temperature between 25°C to 30°C. Make sure not to overheat, as it may affect the texture.
5. Steaming: Once the sweet potatoes are partially dried, place them in a steamer and steam for about 30 minutes. This step helps to further dry the potatoes and prepare them for the next stage.
6. Sugar Coating and Softening: Take the dried sweet potatoes and place them back in the steamer. When they become warm and soft, spray brown sugar over them. The ratio of dried sweet potato to brown sugar should be 10:1. As the sugar melts, stop the steaming once the sweet potato is fully coated and the sugar has started to penetrate into the core. Then, transfer the mixture to a clean surface, mix thoroughly until the brown sugar is evenly distributed, and allow it to cool. As it cools, the brown sugar will fully absorb into the sweet potato, giving it a sticky and chewy texture.
This golden sweet potato snack has a rich reddish-golden color, a soft yet chewy texture, and a naturally sweet flavor. It’s a delicious and healthy treat that combines the natural sweetness of sweet potatoes with the caramel-like richness of brown sugar. Perfect for snacking or as a traditional dessert.
